Diabetic Recipe: Chicken Avocado Burger

Recipe makes 4 Burgers


  • 1 lb. ground chicken.  97/3 is ideal as a little fat avoids them from being too dry.
  • 1 large ripe but firm avocado
  • 1 egg or ¼ cup of egg substitute
  • ⅓ cup of Panko crumbs
  • 1 minced Jalapeño pepper (optional)
  • ¼ teaspoon of pepper
  • ½ teaspoon of salt 


1. Cut the avocado into chunked cubes. 

2. Put all ingredients except the avocado chunks into a large bowl and mix. 

3. Add in the avocado chunks and shape into 4 evenly sized patties.  Try not to mush the avocado.  

3. Grill for about 4 minutes on each side over medium heat.  Overcooked burgers will become dry.
