Diabetic Recipe: Cauliflower Latkes (Non-Potato Pancakes)

Makes 16 servings

Ingredients    

  • Head of cauliflower, steamed & drained  OR  2 lb. bag of frozen cauliflower,  thawed & drained well 
  • Two whole eggs & two egg whites
  • 1 onion
  • 2 tablespoons whole wheat flour
  • 2 tablespoons olive oil
  • Nonstick cooking spray
  • Salt and pepper to taste

Instructions

Chop the eggs and onion very well.

Add cauliflower, wheat flour, salt & pepper and mix until finely chopped. 

Add 2 tablespoons of olive oil into a non-stick frying pan and wipe with a paper towel. Then add cooking spray. Put stove on medium heat. 

Once hot, use a tablespoon to drop batter into the pan.

Fry 4 to 5 minutes until firm and browned on each side. Make sure it's cooked/firm before flipping to avoid them falling apart!
